  • Caster sugar, can be substituted with brown sugar
  • Eggs
  • Wheat flour
  • Baking powder
  • Apples, you can use tart apples like Granny Smith apples or sweeter ones to your liking
  • Cinnamon, ground
  • Ginger, ground

How to make Finnish Apple pie

Step one: Set up

Turn the oven to 200°C. Set the pot of butter on the stove to melt.

Step two: Preparing the filling

Cut the fresh apples into tiny cubes about 1 cm x  1 cm (about. 0,4 inch). Season them with ground cinnamon, ground ginger, and powdered sugar. Mix well, and set aside.

Step three: Making the batter

Whisk eggs and sugar well together, about 5 minutes, don’t cheat – whisking will make the pie beautiful and fluffy.

Mix wheat flour and baking powder and add the dry ingredients gradually into the sugar-egg mixture alternating with cooled melted butter. The batter is now fluffy in texture and quite runny.

Step four: Layering the pie

Butter your pie tin or use a parchment paper cut a few centimeters wider than your tin.  

Pour fluffy and runny dough into your pie mold. Sprinkle around the seasoned apple cubes on the top of the apple pie. Tap a bit with your palm to lay evenly the apple cubes and make them sink into the Finnish apple pie batter.

Step five: Baking

Bake the apple pie in the oven for about 25-30 minutes until the pie looks golden brown and the toothpick comes out clean.

Serving the Finnish apple pie

This dreamy soft apple pie can be enjoyed as it is, or dusted with some powdered sugar. A scoop of vanilla ice cream or a homemade vanilla sauce is also a classic choice.

Storage

You can store the Finnish apple pie on the table for a few days or in the fridge for up to about 5 days. This apple pie also freezes quite well, so you can store it airtightly for up to 3-5 months. Freeze preferably in pieces to thaw easily. To thaw frugally, use the residual heat of the oven when you have baked something to get the flavor perfect.

How to tweak this recipe

  • Swap the spices: add 1 tsp cardamom, or 1 tsp nutmeg into the mixture with some vanilla sugar.
  • Substitute the apple filling with some blueberries or red currants for example. If you use frozen berries just coat them with about 20-30 grams of potato starch so they will not sink into the bottom.

Little Helper

Apple pie recipe calls for an eager helper in the kitchen. Mixing the apples with the seasoning, and snacking apples is a good job for kids at any age. If your child is not afraid of the electric whisk let them hold it and make circles with it for there is a generous 5 minutes of driving time with the electric whisk. Just make sure your little helper knows not to stick the fingers into the whisk and understands to have independent driving time without worries.
