Easy dry roasted natural cashews in the oven (without oil)

The simple homemade roasted cashews without oil and salt are the best crunchy snack there is. Nuts are delicious and get their best flavors out when roasted gently. No additional oil is needed for we are dry roasting them easily in the oven!

I shared with you my simple oven roasting recipe over social media and you went crazy. Now I adjusted the recipe to match better with cashews that are slightly more delicate than the almonds that are in the video. If you have tested my dry roasted almond recipe, this is quite similar. No oil, no salt – just roasted in the oven. The natural cashews are the best just like this – simply roasted with a crunchy texture and their own naturally rich flavor. Roasting your cashew nuts yourself is a perfect choice if you want to avoid unsaturated fatty acids and excess sodium.

Tips for making

  • Keep a close eye on the cashews the last few minutes to not to burn them!
  • You get the best-tasting nuts when they are golden brown and the scent of delicious roasted cashews spreads around the kitchen.

Are raw cashews healthier than roasted ones?

When roasting nuts or any food there is a loss of some nutrients for sure. The loss is not too significant if you are regularly adding nuts to your diet. Just keep it around 30 grams (1 ounce) to not to exceed the recommended daily dose of cashews.

What to do with roasted cashews?

  • Enjoy plain as a healthy snack! Great way to get some healthy fats into your diet.
  • Make your own trail mix and mix the crispy cashews with other roasted nuts like roasted almonds and dried fruits.
  • Sprinkle on the top of the salads to add a bit of crunch and protein.
  • Pack as a present in a beautiful glass jar with a ribbon as a great gift that is homemade!
  • Top your yogurt, oatmeal, or ice cream (you name it!). 
  • Mix to your homemade granola.
  • Make your own cashew butter in a food processor following my almond butter recipe.

  • Raw cashews: Use whole cashews or split ones. Use the best cashews you can to have the best flavor. I have used in this recipe split cashews to get them more crispy.

How to dry roast cashews in the oven

Step one: Spread cashews on an oven pan

Preheat the oven to 190°C (374°C).  Spread the raw nuts on a parchment paper-lined oven pan. Make sure the cashews are on a single layer to get the best result in roasting. You can roast without the parchment paper too, but I have noticed that it is easier to mix the cashews in the middle of roasting by grabbing the opposite corners of the paper.

Step two: Roast in the oven

Roast cashews in the middle part of the oven for about 8 minutes. If you are roasting several batches at once, about half a kilo per oven pan is quite the perfect amount.

Step three: Mix and roast some more

Mix the cashews by grabbing the opposite corners of the parchment paper and letting the cashews slide in the middle. Spread the cashews to a single layer across the oven pan and roast for 3 to 5 minutes more. Keep a close eye on them at the last minute. Burnt nuts do not taste good! I set the timer always a few minutes, for once I had completely black cashews when I forgot them in the oven… Let the cashews roast until they are golden brown and you have a beautiful scent of roasted cashews spreading over the kitchen.

Step four: Cool and store or serve the dry roasted cashews

Let the dry roasted cashews cool down completely before storing them airtightly to keep the crispy texture. I prefer to store them in a glass jar for they look so beautiful when roasted and they are so simple snacks to grab when they are visible. If you are serving them right away, set them in a beautiful bowl for your movie night or snack time!

Storing the dry roasted cashews

Cashews store super long when stored in an airtight container. Just keep them at room temperature not close to any heat source so as not to let the oil they contain get rancid. 

How to tweak this recipe

  • Add some smoked paprika, garlic powder, or a pinch of salt with a small amount of extra virgin olive oil to get the spices to stick.
  • For sweet flavor add some honey or brown sugar before the roasting process.
  • For spicy roasted cashews add some cayenne pepper or chili powder with a little oil.
